That's the thing - we never see a Gridlock-esque scene between Rose and the Doctor...
Because they didn't have to make an obvious show out of how close Rose and the Doctor were. And the Doctor was hardly going to leave her ass in the year 5 billion, so he had to talk. I suspect she got the nickel tour of the sights, so to speak, but in terms of talking about the people and what Gallifrey was actually like, TSoD makes it clear the Doctor had just told Martha enough to shut her up and then never brought it up again.
